The dough for our apple pie
300 g all-purpose flour (2 1/2 cups)
50 g powdered sugar (1/2 cup)
1 teaspoon Baking powder
180 g butter (3/4 cup)
1 egg

These ingredients form the base of your dough. 👩🍳 Now put all of the ingredients just mentioned in a large mixing bowl. For the best results and an even consistency, we recommend using a food processor. If you don't have a food processor, you can also work with your hands or a hand mixer. The goal is to achieve a homogeneous mass in which all the ingredients are well mixed together.
Once your dough is smooth and pliable, form it into a ball. Wrap the dough in cling film and place it in the fridge for at least 30 minutes . This resting time allows the dough to become firmer, which makes rolling out and further processing much easier.
Once the dough has cooled down, we begin the exciting part of the preparation and shape the dough. Take the chilled dough out of the fridge and divide it into two equal halves using a 🔪 knife or dough scraper. This step is important to evenly cover both the bottom and sides of your cake pan.
Start with the first half of the dough and place it in the baking pan (28 cm x 18 cm or 11 x 7 inches) as shown in the pictures. Now carefully roll out the dough inside the baking pan so that it covers the entire base. If the dough starts to stick, sprinkle a light pinch of flour onto the dough.
Now take the second half of the dough and roll it out on a clean cutting board.
Then cut the dough into strips wide enough to form the sides of the baking pan. Carefully arrange the strips along the edge of the pan to create a nice, even edge. Press the strips of dough lightly on the bottom and sides so that everything sticks together well.
Before you put the dough in the oven, carefully pierce the bottom and sides with a fork 🍴 several times. This step prevents the dough from bubbling or puffing up while baking.
Now it's time to pre-bake the dough. Preheat your oven to 160°C (320°F) and bake the dough for 10 minutes . Pre-baking ensures that the crust reaches a certain level of firmness before the filling is added and that your cake is baked to perfection later.
The centerpiece of the cake

For the centerpiece of the cake, we start by coring and peeling 6 apples 🍏 . The choice of apple variety can vary depending on personal preference, but in general, tart varieties work particularly well as they contribute a strong flavor and pleasant texture.
After the apples are peeled and cored, place them in a large bowl. Halve a lemon 🍋 and squeeze the juice from both halves directly over the apples. The lemon juice not only prevents the apples from turning brown, but also adds a subtle sour note that wonderfully complements the flavor of the apples.
As soon as the pre-baked dough comes out of the oven and has cooled briefly, you can start assembling the apples. Distribute the apples evenly in the baking pan.
With the apples lovingly arranged in the mold, it's time to prepare the filling, which gives our apple pie its incomparable juiciness and flavor intensity. Follow these steps to create the perfect filling.
The delicious filling
150 g powdered sugar (1 1/4 cups)
120 g butter (1/2 cup)
1/4 tsp vanilla bean
4 eggs
500 g low-fat quark (2 cups)
200 ml 30% whipping cream (3/4 cup)
Sliced almonds
Start by adding 150g powdered sugar (equivalent to 1 1/4 cups) and 120g butter (1/2 cup) to the food processor. Blend these ingredients on medium-high speed until smooth and creamy.
While the food processor is running, slowly add 1/4 teaspoon vanilla bean , followed by 4 eggs 🥚 . Add each egg one at a time to ensure it is fully incorporated into the mixture before adding the next. This step is crucial for the smoothness of the filling.
After the eggs are well mixed in, reduce the speed of the food processor and carefully start adding 500 g low-fat quark (2 cups) and 200 ml 30% whipping cream (3/4 cup) . Reducing the speed is important to prevent the mixture from splashing and to distribute the quark and cream evenly.
Once the mixture has reached an even, thick consistency, carefully pour it over the apples in the baking pan. Make sure the filling is evenly distributed and the apples are completely covered.
Before the cake goes into the oven, sprinkle some sliced almonds over the filling. They not only give the cake an attractive look, but also a pleasant texture and a nutty taste.
Bake the cake at 160°C (320°F) fan 🔥 for 50 minutes . To ensure the cake gets a nice golden brown without burning, cover it with a piece of baking paper about 15 minutes before the end of the baking time. This technique helps protect the surface from over-browning while the filling and dough bake to perfection.
After the cake is finished baking, let it cool in the pan before serving. This step gives the cake time to set and makes it easier to cut.
